Passito is among the Montefalco wines that best describes the history and traditions that are the foundation of our production. It is in fact the oldest of the local wines: a sweet wine, the fruit of patiently drying grapes on traditional racks for a few weeks, intended for religious rituals or holidays and major celebrations, occasions when local farmers do not hesitate to open a bottle to share with family.
A wine that is born in our vineyards of Colle San Clemente, whose grapes after the harvest are left to dry naturally for almost two months. The method of winemaking is extremely traditional: left to macerate in its skins for 6/8 weeks, mature in French oak barrels for at least a year before a further period of aging in bottle for about 6 months.
It goes beautifully with red fruit tarts, pastries, dark chocolate, and especially aged cheeses. We recommend serving at a temperature of 15-16 ° C(59/60 ° F).
