Passito is among the Montefalco wines that best describes the history and traditions that are the foundation of our production. It is in fact the oldest of the local wines: a sweet wine, the fruit of patiently drying grapes on traditional racks for a few weeks, intended for religious rituals or holidays and major celebrations, occasions when local farmers do not hesitate to open a bottle to share with family.

A wine that is born in our vineyards of Colle San Clemente, whose grapes after the harvest are left to dry naturally for almost two months. The method of winemaking is extremely traditional: left to macerate in its skins for 6/8 weeks, mature both in oak and glass for more than 3 years.

It goes beautifully with red fruit tarts, sweet biscuits (tozzetti), gianduia chocolate and mature cheeses (Parmigiano Reggiano). We reccomend serving at a temperature of 16/18 °C (60.8/64.4 °F), temperature generally lower than the “ambient” one.

The Montefalco Sagrantino Passito "Cocrè" recalls a practice with an ancient and familiar quality: it is that crochet used to make lace, a specific processing of yarns that leads to a light, precious and ornate fabric, as has always been done by our grandmothers in front of the fireplace, in winter.
